Blueberry Christmas cake is incredibly simple to make and delicious. It has a good balance between sweetness and a light touch of flavor. It feeds 16 people, which means it’s perfect for a Christmas party.
3 large eggs at room temperature
2 C sugar
3/4 C unsalted butter softened
1 teaspoon vanilla extract
1 teaspoon almond extract
Multipurpose flour 2 C
12 oz fresh blueberries
Powdered sugar for decoration
Preheat the oven to 350 degrees.
Prepare a 9 x 13 pan with non-stick baking spray.
Beat eggs and sugar with an electric mixer until slightly thickened and light in color.
This mixture should form peaks when the beaters are raised from the bowl.
Add the butter, almond and vanilla extract to the egg mixture and continue mixing.
Mix for two minutes.
Slowly add the flour, but only until blended.
Add the fresh blueberries.
Stir the cranberries to mix well.
Bake at 350 degrees for 40-50 minutes.
Allow cake to cool completely before slicing.
Garnish with powdered sugar.
Makes 16 servings.
