CRISPY ZUCCHINI FRITTERS

This delicious zucchini fritter recipe is incredibly easy to make, low in carbohydrates, and are the perfect way to introduce some extra vegetables! Perfect as a side dish, a light lunch or a simple appetizer, these crunchy fritters are a great way to use leftover zucchini.

INGREDIENTS

Zucchini fritters
1 Zucchini
1 beaten egg
1/3 cup almond flour
1/2 cup of Ricotta cheese
3 tablespoons of grated Parmesan cheese
1 tablespoon of freshly chopped chives
1 tablespoon of freshly chopped parsley
Salt and pepper to taste
Friendly Keto oil for frying

Dill sauce
1/2 cup of natural yogurt
1 tablespoon of lemon juice
2 chopped garlic coves
2 teaspoons fresh dill or 1/2 teaspoon dry dill
