These zucchini pancakes are the perfect way to enjoy this colorful vegetable! The grated zucchini is mixed with Parmesan cheese, flour and spices and fried into perfect zucchini pancakes.
2 large or 3 small zucchini
1 garlic clove
2 tablespoons of olive oil, divided
⅓ cup of flour
1 teaspoon baking powder
⅓ cup mozzarella cheese
½ teaspoon salt
½ teaspoon onion powder
¼ cup grated parmesan cheese
Cook the grated zucchini in a non-stick pan until tender, about 5 minutes. Cool it and with cheesecloth or dishcloth, squeeze out as much moisture as possible.
In a medium bowl, combine flour, seasonings and cheese. Add the zucchini and egg.
Heat a tablespoon of olive oil in a skillet over medium-high heat. Spoon zucchini mixture into the hot oil. Spread it out in 3″ circles.
Fry for 3 to 4 minutes on each side, turning as needed.
Serve hot with sour cream or tomato sauce.
