1 English cucumber, cut in half lengthwise
1 can chicken breast, drained and shredded
4 ounces Neufchatel cheese, softened
1 tablespoon of light mayonnaise
2 green onions, finely chopped
1 red tomato (plum), chopped
1/2 teaspoon red pepper flakes, or to taste
1/4 teaspoon garlic salt
1 package (7.2 oz.) Original Factory(R) Pretzel Crisps(R)
Cut cucumber halves lengthwise with a mandolin or knife into long slices 1/8 inch thick
Mix the chicken, Neufchatel cheese, mayonnaise, green onions, tomato, red pepper flakes and garlic salt until well mixed.
Place the cucumber slices on a work surface. Spoon two teaspoons of the chicken mixture onto the bottom (flat) edge of each slice; roll-up. Secure with toothpicks and place rolls upright like cups on a serving plate. Push one Snack Factory(R) Crisp(R) Pretzel into half of the chicken mixture.
