Stuffed Pepper Soup Is a Full Meal in a Bowl

“An easy soup that tastes like stuffed peppers. A full meal in a bowl and it’s great with hot bread and a salad!”

Ingredients

1 pound of ground sirloin
1 green pepper, chopped
1 cup finely chopped onion
1 can (29 ounces) diced tomatoes
1 can (15 ounces) tomato sauce
A 14-ounce can of chicken broth
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
salt and pepper to taste
1 cup white rice

Addresses

In a big pot of broth, brown ground meat. Drain the fat and add pepper and onion. Cook until the onion is translucent, not allowing it to brown.
Add the tomatoes, tomato sauce, broth, thyme, sage and season with salt and pepper. Cover and simmer for 30 to 45 minutes, until the peppers are tender.
In another saucepan boil 2 cups of water, and add the rice. Cook until rice is tender, then add to soup. Heat the soup and serve.
