Oatmeal Chocolate Chip Cookies

Oatmeal cookies with chocolate chips, nothing is as good as a hot pan of these cookies!


2 ½ cups quick-cooking oats
1 ½ cups of all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons of corn starch
1 cup of butter at room temperature
1 cup of packed brown sugar
½ cup granulated sugar
2 eggs
2 teaspoons vanilla extract
1 ¾ cups of chocolate chips


Preheat the oven to 375°F. Line cookie sheets with parchment paper.
Beat the oats, flour, baking soda, salt and cornstarch. Set aside.
Mix the butter, the brown sugar, the white sugar and the vanilla. Add the eggs and beat until fluffy.
Gradually add the oat mixture, little by little, until it is well mixed. Add the chocolate chips and stir.
Place the spoonfuls on the cookie sheets.
Bake for 10-12 minutes or until lightly browned at the edges. Cool for 2 minutes and transfer to a wire rack to cool completely.
