Peanut butter cupcakes with peanut butter frosting are cupcakes made with peanut butter and topped with homemade peanut butter frosting.
As you can tell from the title of these cupcakes, I love peanut butter. Both the cupcakes and the frosting are made with it so there is plenty of peanut butter flavor in every bite. The cupcakes are delicious on their own, with a moist crumb and a hint of peanut butter. But, the frosting adds that little extra flavor I was hoping for in a peanut butter cupcake.
INGREDIENTS
CUPCAKES
2 cups (250 g) all-purpose flour
2 teaspoons baking powder
½ cup (1 stick or 113g) butter
1½ cups (300g) granulated sugar
1 cup (1 cup) creamy peanut butter
1 teaspoon vanilla extract
2 large eggs, at room temperature
¾ cup (184 g) buttermilk
FOR FROSTING
1 cup (125 g) powdered sugar, sifted
3 tablespoons butter, room temperature
⅔ cups creamy peanut butter
3 tablespoons heavy cream
½ teaspoon vanilla
1 pinch of salt
