I love making egg rolls. I think they’re a snack food and people always love them. The other day I was unpacking the groceries and sitting next to each other at the counter there were egg roll wrappers and taco seasoning… and I thought… HEY!!! Why not?
1 pound of lean ground beef
1 onion, finely chopped
1 green pepper, diced
2 tablespoons of sauce
1 package of taco seasoning
20 egg roll wrappers of mine were 5″x5 ″
2 cups of grated cheese (cheddar, monterey jack, tex mex mix, all work well)
Brown the ground meat and onions until no longer pink. Add green peppers, taco seasoning, salsa and water as directed on package. Cook until water is evaporated.
Place each egg roll wrapper outside with a corner pointing towards you. Place 1 ½ tablespoon of cheese and 1 ½ tablespoon of taco filling in the center of each wrap. Fold the sides and roll up the wrap tightly. Use a little water to secure the tip of the wrap. (If you do not know how to roll an egg roll, it is usually shown on the package.)
